Paleo Cannoli (Italian dessert)

You may have heard of Italian cannoli’s (a tube like pastry brimming with a creamy filling), but have you heard of a paleo cannoli’s??

Growing up in an Italian household, cannoli’s were a staple. They were the perfect dessert to any dinner, and cannoli’s were always there for birthdays, anniversaries, Christmas….
Typically cannoli’s are fried in order to create a crispy outer shell, to keeps things on the lighter side, we bake our version to give them a soft chewy texture that’s still every bit as delicious as the original.
So how are they made?! Free from grains, dairy, gluten, and refined sugar, our paleo cannoli shells are made with our “rice” paper wraps (no rice of course). As for the filling, it’s rich, creamy, sweet and a delicious alternative to the typical cheese filling.

Paleo Cannoli


To make the cannoli pastry:

  • 1 batch “Rice” paper wraps (see page #156 of Healthy Comforts)

To make the cannoli filling:

  • 2 cups raw, unsalted cashews (Cover with hot water and allow to soak for a minimum of 2 hours which allows for a very creamy filling)
  • 2 tbsp unsweetened condensed coconut milk
  • 4-5 tbsp honey (adjust to personal taste)
  • 1 tsp vanilla
  • 1/2 cup dairy-free chocolate chips


To make the cannoli pastry:

  • Make 1 batch of “Rice” paper wraps (page #156 of Healthy Comforts).
  • Prepare a baking sheet lined with parchment paper and set aside.
  • Preheat oven to 350F.
  • Either wrap the whole “rice” paper wrap around a stainless cannoli tube or slice the wraps in 4 strips as we did and wrap around the tube to create texture.
  • Place the prepared cannoli tubes on the prepared pan and bake until golden brown, turning often to get an even colour. 
  • Remove from the oven and place on a wire rack until cool, then slide the pastry out of the stainless steel tube. 

To make the cannoli filing:

  • Drain and rinse cashews under cold water, until water runs clear. 
  • Place the drained cashews in a high-speed blender along with the rest of the ingredients, except the chocolate chips. Blend until smooth and creamy. 
  • Transfer the filling to a bowl and add the chocolate chips. Mix to well to combine. 
  • Transfer filling to a piping bag or reusable bag and pipe the filling into the cannoli.
