Grain-Free, Dairy-Free Pancakes

Grain-free pancakes makes a perfect Sunday morning meal!

Sure, the box pancake mix is easier to make, but why not make your own with the ingredients you have at home. The combination of ingredients make these thick and delicious, just like the ones I remember as a child. The best part is that they are gluten, grain, and dairy free!

Top these with:

  • coconut yoghurt
  • maple syrup
  • nut butter
  • fresh fruit
  • berry compote
  • coconut flakes

You can even use the dry ingredients in this recipe as a DIY Mason Jar Gift. Simply use the base of the recipe (the non-perishables like the almond flour, coconut flour, salt, cinnamon, baking soda, baking powder) as your edible gift.

Ingredients:
¼ cup coconut flour
½ cup almond flour
½ teaspoon of unrefined salt
½ teaspoon cinnamon
1 teaspoon baking powder
½ teaspoon baking soda
¾ cup non-dairy milk
2 tablespoons applesauce
½ teaspoon vanilla
3 eggs (whites only)
1 tablespoon coconut nectar

Directions:
In a large bowl, whisk all the dry ingredients: the coconut and almond flours, baking powder, baking soda, salt and cinnamon.
In another bowl, whisk wet ingredients so that the eggs, non-dairy milk, applesauce, vanilla and coconut nectar are completely blended. Place the wet ingredients in the bowl of dry ingredients.
Heat a lightly oiled griddle over low high heat. Scoop the batter onto the griddle. Brown on both sides and serve hot. Instead of cinnamon, you may wish to add chocolate chips or carob powder.

Top with fresh fruit, maple syrup, nut butter or coconut yogurt.
