Despite the calendar telling us that it is officially spring, I’m not sure if I believe it! The cold air always leaves us feeling with a desire for a warm, nourishing meal. This Turkey Meatball Soup is an easy recipe to make when the family is craving soup.
One of my favourite ingredients is Rawsome by Now Foods! Rawsome, a whole food meal, makes adding nutrients to our comfort foods convenient. One teaspoon serving is a source of 7 essential nutrients including vitamins, minerals and Omega-3 fatty acids, plus antioxidants from 10 different whole seeds, fruits and vegetables.
The best part is that it’s kid approved! We’ve added Rawsome to a variety of our meals this week, and they were an instant hit.
Rawsome can be added to:
- Meat dishes
- Baked goods
To make this soup recipe, many of the ingredients are ones that you already have at home.
To prepare the meatballs:
1 pound of ground turkey or chicken
2 tbsp Rawsome by @Now Foods
¼ cup nutritional yeast
Salt and pepper
To prepare the soup:
6 cups of bone broth
3 celery stalks, chopped
3 carrots, diced
2 cups of spinach, chopped, stems trimmed
2 green onions, chopped
Salt and pepper to taste
1 tbsp parsley
Using a tablespoon, scoop some of the chicken mix and roll into a ball. Once rolled, place it onto a dish. Repeat until all the chicken mix has been prepared into balls.
In a pot, add the bone broth, diced carrots and celery and bring to a boil. Add salt and pepper. After 20 minutes, add the meatballs to the broth as it simmers. Bring it to a boil, and let the soup simmer for another 30 minutes. Then, add the chopped spinach and onions and let it simmer for another 10 minutes.
