Granola Cups with Coconut Yoghurt and Berries

This granola cup is my new favourite breakfast!

The star of this treat is the grain-free @naturespathorganic Caramel Pecan granola, and is loaded with pumpkin, chia and sunflower seeds, coconut oil and sweetened with coconut sugar. Great for anyone following a paleo or vegan diet!

Ingredients:
1 cup of dates
1 cup of grain-free caramel pecan granola @naturespathorganic
¼ cup apple sauce
⅛ tsp salt

Directions:
Line a muffin tin with paper liners (make 5 in total).
Using a food processor, blend the dates into a paste.
Add the granola, apple sauce and salt. Blend again.
Scoop mixture into prepared muffin cups.
Press the mixture into the base and sides of the muffin cup.
Cover the muffin tray and place in the freezer for a few hours.
Add coconut yogurt to each muffin cup, and top with fruit.

  • Add coconut yogurt to each muffin cup, and top with fruit.
