Paleo pinwheels are a remake of the classic appetizer, which is perfect for just about any occasion.
Fancy enough for New Years or movie night! These two-bite rolls can be stuffed with whatever you like, from luncheon meat to tuna or egg salad (Always opt for high quality protein with no additives). This pinwheel appetizer will be a great hit at any party but they also make a delicious snack, or lunch option for kids to take to school.
We used our pizza crust (paleo, and nut free) and turned it into pinwheel roll-ups, adding cashew based cheese mimicking the gooey goodness of real cheese and an assortment of deli meat.
Be sure to make your “cheese” ahead of time so it has time to set in the fridge. We use this delicious and easy to make cashew “cheese” in jalapeño poppers, lasagna and on pizza. * Click on the link for our pizza crust recipe, or find it in Healthy Comforts Cookbook, page 100. http://www.healthycomforts.ca/pizza/ . The original recipe calls for 1/2 cup of water, however, to make the dough more pliable to roll, add 3/4 cup of water.
The Cashew “cheese” recipe can be found in Healthy Comforts (with a couple of different options). Make the pizza crust according to the recipe (**note – recipe calls for 1/2 cup of water, to make the dough more pliable to roll, add 3/4 cup of water)
- Allow the pizza to cool, slide off the tray and cut away the edges of the crust. We cut the pizza crust in half, horizontally so it’s easier to roll.
- Lay your filling across the dough. Gently roll and secure with toothpicks.
- Cut into pinwheels and enjoy!
